Suji Halwa With Ghee - The 10 Minute Recipe That Fixes Everything

There is a reason why every Indian mom makes suji halwa when something goes wrong.

Bad day? Suji halwa.
Guests coming in 10 minutes? Suji halwa.
Tuesday puja? Suji halwa.

At our home in Barsana, my mom makes suji halwa every Tuesday for prasad. And she makes it only in one ghee - our own A2 Gir Cow Bilona Ghee. She says "Bhagwan ko vanaspati ka bhog nahi lagate."

The halwa she makes is different. It's not sticky, not dry. Each grain of suji is separate, soft, and shines with ghee.

Let me share her exact temple-style recipe. The one that never fails.

The Real Secret is Ghee Ratio

Most recipes on YouTube will say "take equal ghee and suji". That's wrong.

If you take equal ghee, your halwa will be oily.

My mom's perfect ratio which I have measured 100 times is:

1 Cup Suji : 3/4 Cup A2 Ghee : 2 Cups Water/Sugar Mix

This ratio gives you that perfect non-sticky, soft halwa where each grain is khila-khila.

And please, use moti suji, not the fine zero number wala. Fine suji makes halwa like paste.

Ingredients (For 3-4 People)

- Suji (Semolina) - 1 Cup (Moti wali)
- The Barsana Farm A2 Gir Cow Ghee - 3/4 Cup - This is non-negotiable for taste
- Sugar - 3/4 Cup (If you like more sweet, take 1 cup)
- Water - 2 Cups
- Elaichi Powder - 1/2 tsp
- Kaju, Kismis, Badam - handful
- Optional - 1 tbsp besan (This is my mom's secret for that slight halwai color)

Recipe - Step by Step, No Lumps

Step 1: Sugar Water Ready Rakho
Ek side me ek pan me 2 cup paani aur 3/4 cup cheeni garam kar lo. Cheeni pighal jaye bas, ubalna nahi hai. Gas band kar do. Isse halwa me lumps nahi bante. Most people directly sugar daalte hai, tabhi halwa chipak jata hai.

Step 2: Suji ko Bhuno
Kadhai me 3/4 cup A2 ghee dalo. Ghee garam hote hi suji daal do. Aur saath me agar besan use kar rahe ho toh woh bhi.

Ab medium-low flame par 7-8 minute bhuno.

How to know it's done? Your kitchen will smell amazing. Like pure desi ghee and roasted suji. And the color will become very light golden. Not brown. Light golden.

Add your dry fruits now and roast for 30 seconds more.

Step 3: The Magic Step
Gas ko slow kar do. Ab jo cheeni wala paani banaya tha, usko dheere-dheere dalo. Ek haath se paani dalo, dusre haath se lagatar chalao.

It will splutter a lot, so be careful. This is why you need to keep flame low.

As soon as you add water, suji will absorb it in 1 minute. Keep stirring.

Step 4: Dum pe Rakho
Jab paani sukh jaye aur halwa kadhai chhodne lage, usme elaichi powder dalo. Ek aur chamach A2 ghee upar se dalo. Yes, one more spoon. This is the final shine.

Mix, cover with a plate for 2 minutes on low flame. This is called dum.

Open it. Your halwa is ready. Each grain will be separate, soft and shining.

Why My Halwa is Always Soft (3 Mistakes to Avoid)

1. Ghee me kanjoosi: If you use less ghee, halwa will be dry and sticky. Suji needs ghee.
2. Direct sugar daalna: Always make sugar water first. Direct sugar makes halwa hard.
3. Tez aanch: Suji jaldi jal jati hai. Always bhuno on low-medium.

Puja Wala Halwa vs Normal Halwa?

For puja and bhog, we never add too much dry fruit. We keep it simple. Just suji, ghee, sugar and elaichi. And we make it in pure cow ghee only.

My mom says cow ghee is sattvic, so Bhagwan loves it.

That's why for Tuesday and Ashtami prasad, we only use Barsana Farm A2 ghee. The aroma itself feels like prasad.
