Why Does Ghee Change Color? Is My Ghee Pure or Fake?

Last week, one of our customers from Delhi called me.

"Bhaiya, maine aapka ghee fridge me rakha, woh white ho gaya. Kharab toh nahi ho gaya?"

This is the most common question we get at The Barsana Farm. So let me clear this once and for all.

If your ghee is changing color, it is actually a GOOD sign. It means your ghee is pure.

Fake ghee or vanaspati ghee will never change color. It will stay the same yellow for months.

Let me explain why.

1. Why Ghee Becomes White in Winter?

This is 100% natural.

Pure A2 Cow Ghee contains natural milk fat. When the temperature drops below 20°C, the fat starts to solidify. That golden liquid becomes semi-solid and looks white or off-white.

Think of it like coconut oil. In summer it's liquid, in winter it's white solid. Same logic.

If your Barsana Farm ghee turned white in December-January, don't worry. Just keep the jar in a little sunlight or warm place, it will become golden again. This is proof of purity.

Fake ghee test: If ghee stays yellow and liquid even in peak winter in Delhi, it's adulterated.

2. Why Ghee is Sometimes Deep Yellow and Sometimes Light Yellow?

This depends on what the cow ate.

Our Gir cows at Barsana Farm eat fresh green grass during monsoon. When cows eat green grass, ghee becomes deep yellow because of a natural compound called Beta-Carotene.

In summer, when green grass is less, the color is light yellow.

So if you bought ghee in August and it was dark yellow, and you bought again in May and it's light yellow - both are pure. It's just seasonal.

Buffalo ghee, on the other hand, is always whitish because buffalo milk has zero beta-carotene.

3. Why Does Ghee Turn Brown After Heating?

This one is important.

When you heat ghee too much for tadka, it turns brown. That is because the small milk solids left in bilona ghee get burnt.

A little browning is okay. But if it turns dark brown and smells burnt, you've overheated it.

Tip: Always make tadka on medium flame, not high. Pure bilona ghee has a lower smoke point than factory-made ghee.

4. When Should You WORRY About Color Change?

Okay, so when is color change a bad sign? Throw your ghee away if:

a) You see Black Spots: Means fungus. This happens if you use a wet spoon.
b) Top layer is white but bottom is dark: Means moisture went inside.
c) It smells sour or soapy: Means it has gone rancid.

Otherwise, white to yellow to golden - all is fine.

So, Which Color Ghee is Most Pure?

Don't go by color. Go by 3 things:

1.  Aroma: Pure ghee has a nutty, grainy aroma. Not a strong chemical yellow color smell.
2.  Texture: Pure bilona ghee is danedar (grainy), not smooth like cream.
3.  Lab Report: We at The Barsana Farm provide lab test for every batch.

I always tell my customers - the best ghee in India will never have the same color throughout the year. If the color is constant, the brand is adding color.

Q. Why is my cow ghee white and not yellow?
Because of cold weather, pure cow ghee solidifies and turns white. It's a sign of purity, not adulteration.

Q. Is yellow ghee better than white ghee?
Yellow color means it has more beta-carotene (from Gir cow). Both yellow and whitish-yellow are pure if it's A2 cow ghee.

Q. Why does ghee color change after opening the jar?
After opening, air enters and the top layer may become slightly lighter. Always use a dry spoon and close the lid tightly.
